Baked Treacle Pudding
100g softened unsalted butter
100g caster sugar
100g self-raising flour
grated zest of 1 lemon
6 tbs golden syrup (or jam)
Cream butter and sugar with a spoon.
Add one egg and mix carefully with a spoon of flour to prevent curdling.
Add the other egg.
Fold in flour and add salt.
Spoon on top of syrup into buttered pudding dish.
Cover with buttered foil with a fold to allow for expansion.
Bake a 200 deg for 35-40 minutes until a skewer comes out clean.
Serve with cream.
